Blueberry, Apple, Spinach and Banana

The beauty of homemade baby food is that it doesn’t have to be complex. The best first recipes are just vegetables themselves: pureed sweet potatoes, squash, avocados, bananas. The list is endless. From there I start adding spices for variety. I add cinnamon to pureed apples, cardamom to pureed sweet potatoes, and dill to pureed carrots. Lastly, I like to combine fruits and vegetables in various combinations that make some very healthy vegetables irresistible to babies. This is one of the latter recipes: a great way to pack in a lot of spinach.

Blueberry, Apple, Spinach and Banana
Love and Duck Fat

1 cup apple, peeled and diced
1 cup blueberries (fresh or frozen)
¼ cup of water
1 cup packed fresh spinach leaves
½ banana

Optional add ins: chia seeds or cooked quinoa

In a small saucepan, heat apple and blueberries over medium heat. Add water or juice and reduce to a simmer. Cover and cook until the apples are soft and the blueberries break down. Add the spinach and stir until wilted. Allow to cool.

Using a food processor, puree the apple mixture with the banana. Add water, milk or formula if you want a thinner consistency.
