Three Onion Chip Dip

The Town of Harrow is a small community in Essex County, just outside Windsor, ON. Essex County is the most southern point in Canada and enjoys long warm summers and an extended growing season (for Canada of course…we are grading on a curve here!). In addition to that, Essex County is shockingly flat. Not a hill or even a mound in site. While this may make for boring driving, it is great for farming and Essex County boasts amazing produce.

Essex County, and Harrow specifically is also known for its Fair, which has been in existence since 1854. The Harrow Fair continues to hold multiple contests that include livestock, produce, baked goods, and preserves, among others. It is one of the oldest and most popular county fairs in Canada.

Recently, the Harrow Fair Cookbook was published and it contains many of the prize-winning recipes as well as recipes featuring produce from the area. It is one of my favourite cookbooks, mostly for nostalgic reasons, but also for the wonderful recipes it contains including one of my ‘go to’ party dips. This chip dip is what “Helluva Good Dip” aspires to be (and let me state for the record that I love Helluva Good Dip and sometimes wake up in the night craving it). If you want to impress at your next tailgate, barbeque, or potluck, whip up a batch of this dip and serve it with plain potato chips, vegetables, or basically anything.

 

Three Onion Chip Dip
Harrow Fair Cookbook

¼ cup extra virgin olive oil
2 cups thinly sliced yellow onion
1 cup thinly sliced red onion
1/8 tsp cayenne pepper
1 tsp fine sea salt
½ tsp freshly ground black pepper
¾ cup sour cream
¾ cup mayonnaise
½ cup cream cheese, softened
½ cup thinly sliced green onions

Heat the olive oil in a large skillet set over medium-low heat. Add the yellow and red onions, cayenne pepper, salt, and pepper. Cook for 30 minutes, stirring frequently, or until the onions have caramelized.

Mix together the sour cream, mayonnaise, and cream cheese in a large bowl. Stir in the cooked mixture. Add the green onions.

Let the dip sit for at least 1 hour before serving with potato chips. Serve chilled or at room temperature.

The dip can be refrigerated for up to 5 days, until ready to serve.
